Ingredients

- (1) Ribeye Steak
- (1) Tenderloin Steak
- (1) Top Sirloin Steak
Directions
Ingredients:
- Five Mile Beef steak (ribeye or sirloin), approximately 1.25 inches thick
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons of olive oil or butter
- Fresh herbs (thyme, rosemary), optional
- Garlic cloves, optional
Grilling Instructions: 8-10 minutes, plus 10 minutes resting time.
- Preparation: Allow your steak to reach room temperature for about 30 minutes. Season generously with salt and pepper.
- Preheat your Grill: Preheat your grill to a high setting, aiming for a temperature around 450°F to 500°F.
- Grill: Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or longer depending on your preference. For an extra touch of flavor, add some butter and herbs to the grill during the last few minutes of cooking.
- Rest: Let your steak rest for at least 10 minutes before slicing. This helps retain its juicy flavors.
Sous Vide Instructions: 2 hours, plus 2-4 minutes for searing and 10 minutes resting time.
- Preparation: Season your steak as above and place it in a vacuum-seal bag with olive oil or butter, and optionally, herbs and garlic.
- Sous Vide: Set your sous vide machine to 129°F (54°C) for medium-rare. Submerge the steak in the water bath and cook for 2 hours.
- Searing: After sous vide cooking, quickly sear your steak on a very hot pan or grill for 1-2 minutes per side to develop a crust.
- Rest and Serve: Let it rest for a few minutes, then serve.
Finishing Touches:
- Serve your steak with a side of fresh, seasonal vegetables or a simple salad to complement the rich flavors of the beef.
- A sprinkle of coarse sea salt before serving can enhance the natural flavors of the steak.
